Meal Prep of the Month

This month’s meal prep of the month is one that I have consistently been obsessed with and have started to make each week. If you know me, you know that I am a sweet treat girlie, so having something quick and easy to make that satisfies my sweet tooth and is good on the macros? That’s a yes from me!

Protein Cookie Dough Bark

Ingredients

  • ½ cup almond flour

  • ½ cup protein powder (I have used several different kinds, and they all have worked for this recipe)

  • ¼ cup melted coconut oil

  • 2 Tbsp honey or maple syrup (I normally use maple syrup)

  • 2-4 Tbsp milk or water (start with 2)

  • 1/3 cup chocolate chips (I use dark chocolate)

Directions

Mix all ingredients (except chocolate chips) together in a bowl. Start with 2 Tbsp of milk or water and add more if needed. Different protein powders will require different amounts of liquid. It should turn into a cookie dough like consistency.

Put parchment paper on a cookie sheet and spread “dough” out on cookie sheet until it is about ¼ - ½ inch thick. Doesn’t have to be perfect.

Melt chocolate chips and ½ tsp coconut oil in a microwave safe bowl in 30 second intervals. Once it is fully melted, spread evenly on top of the “dough”.

Place in the freezer for at least 1 hour. Take out, break into pieces and enjoy!

These can be stored in an airtight container in the refrigerator or freezer for up to 1 week.
