Meal Prep of the Month
This month’s meal prep of the month is constantly one of my go-to meals. I absolutely love breakfast food and simply cannot go a day without it. I had seen several variations of breakfast burritos and one day decided to try my own! They are the perfect grab-and-go during the week and will stay good in the freezer for up to a few months.
Here is my recipe for meal prep breakfast burritos!
Yields: 8 servings
Ingredients
4 eggs
2 cups egg whites
1 lb ground pork sausage
8 spinach tortillas (I use the Aldi brand)
1/2 cup shredded cheese (whatever kind you like)
1 tsp seasoned salt
Directions
Cook pork sausage in a pan on the stove. Season with seasoned salt.
While that is browning, add your eggs and egg whites into another pan and scramble. Season with salt and pepper to taste.
Once the eggs and pork sausage are done cooking, add the sausage to the pan with the eggs and then add the cheese and stir to combine
Wait a few minutes for the mixture to cool slightly before starting to make the wraps
Add 2/3 cup of egg and sausage mixture to the spinach wrap
Fold wrap, cover in plastic wrap and place in the freezer.
